How to organise a wine tasting at home: the practical guide
Back to all Introduction Organising
Dry white wine for cooking is a valuable ingredient in many recipes, capable of enhancing flavors and aromas without overpowering them. Whether you’re preparing a creamy risotto or cooking fish and white meats, knowing how to choose the right wine can make the difference between a good dish and an unforgettable one.
In this guide, we’ll look at the essential characteristics to look for in a dry white cooking wine, the best pairings, and some practical tips for achieving perfect results.
Wine in cooking isn’t just used for ‘flavoring’; it performs several crucial functions:
It enhances the flavors of the main ingredients.
It balances the fat content with its acidity.
It adds aromatic complexity to sauces and cooking juices.
Dry white wine is particularly valued because it contains no residual sugars, which could alter the taste of the dish during cooking by making it too sweet.
When it comes to cooking wine, many people make the mistake of using poor-quality products. In reality, the principle is simple: don’t put anything on your plate that you wouldn’t drink in your glass.
Here are the main criteria:
1. Type of Wine
Choose dry, fresh white wines with good acidity and moderate alcohol content (11–13%). Good examples include: Pinot Grigio, Vermentino, Sauvignon Blanc, and Trebbiano.
2. Aroma and Flavor
The wine should be neutral or delicately aromatic so as not to overpower the main ingredients. Avoid wines that are too oaked or have pronounced sweet notes.
3. Origin and Quality
Choose Italian DOC or IGT wines, preferably from wineries that ensure traceability and respect for the grapes. A great example? A Pinot Grigio delle Venezie DOC: balanced, versatile, and perfect for cooking.
Deglazing: Added hot to deglaze and flavor pan bases (e.g., risottos, escalopes).
Marinating: To tenderize and flavor meat and fish.
Slow Cooking: To add complexity to soups and sauces.
Saffron Risotto
A classic Italian dish. After toasting the rice, deglazing with a Pinot Grigio delle Venezie DOC enhances the dish’s creaminess and aroma.
Sea Bass Fillet en Papillote
Dry white wine, combined with fresh aromatics, releases fragrant vapors that gently cook the fish.
Lemon Escalopes (Scallopine al Limone)
The wine is used to deglaze the meat and create a flavorful base that pairs perfectly with the citrus notes.
